Certain meals conjure
up images of family and feelings of comfort. During her decades-long
reign as Morgan's dean of Food Services, Helen "Mom" Roberts excelled
at using food as a means to transport Morgan students and faculty
back home.
In April 2002, Morgan
President Dr. Earl S. Richardson dedicated the new faculty-staff
dining room in honor of Roberts. The dining room menu carries a
meal prominently named after her, an appropriately nurturing dish
of succulent roast beef served with homemade mashed potatoes and
rich brown gravy.
